Bhatura

Ingredients:

  1. Maida (flour) 230 gram.
  2. Salt a pinch.
  3. Sugar 1 tsp.
  4. Biocarbonate soda 1/2 tsp.
  5. Melted ghee.
  6. Curd 120 g.
  7. Water 5-6 tsp.

Method:

  • Mix biocarbonate soda and salt with flour and sieve into a bowl.
  • Add sugar to warm water .
  • Make a soft dough of maida with water and curd.
  • Continue kneeding the dough till it does not stick to fingers or to the sides of the bowl.

  • Apply 1 tsp of melted ghee to the hand and continue kneeding till the dough becomes pliable.
  • Cover it with a wet cloth and leave itto sweel in a warm place for 3 to 4 hours.
  • Divide it into 10 to 12 equal parts , shapes into balls and roll out into rounds about 4" in diameter.
  • Fry them, one at a time, in smoking hot ghee till light brown and puffed up.
  • Serve them with hot channas with onions and green chillis salad sprinkle with lemon juice.
